1 ½ cups plain flour
½ cup sugar
1 ½ teaspoon baking powder
9 tablespoons butter, melted
¾ cup milk
1 egg, lightly beaten
½ tablespoon pure vanilla extract

4 cups or more, as needed for frying Vegetable Oil, for frying

Preheat about 4 inches of vegetable oil in a large deep skillet fitted with a thermometer over medium-high heat until oil reaches 375° F. Or, preheat your Donut Machine.

In a small sauce pan melt butter on low heat.

Meanwhile, in large bowl mix dry ingredients and then make a well in the center. Whisk the butter, milk and egg until mixture forms a smooth batter.

Transfer to a pitcher or piping bag.

If frying: Pour or pipe batter into hot oil. Remove the doughnuts with a slotted spoon and drain on a wire rack. As cools sprinkle with sugar and cinnamon.

IF cooking in the Donut Machine: Pour or pipe batter in machine, close lid and cook for 6 minutes or until golden brown and cooked through. Use a fork or chopstick to transfer doughnuts to a wire rack.

Serve with melted chocolate for dipping and a cup of hot coffee.
