I had so much fun making these mini quiches in a muffin pan. I needed an easy app to serve company while the rest of my dishes were still cooking and this recipe was born. They cook up quickly and the only problem you will have is that your guests will want more. Enjoy!
1 onion, chopped
1 pepper, chopped
2 cups fresh spinach or 5 oz frozen spinach
2 tbs olive oil
1/2 cup half & half
1/4 cup Cheddar cheese, shredded
Salt and pepper, to taste
Preheat oven to 375 °
Heat the olive oil in a sauté pan over medium heat. Add the onions, peppers and spinach and sauté for 10-15 minutes. Remove from heat.
In a bowl whisk together the eggs, half & half, salt and pepper. Spray the muffin tin with cooking spray. Sprinkle a pinch of cheese into each muffin cup. Add the veggies to the egg mixture.
Ladle the mixture equally among the muffin cups.
Bake them for 20 minutes, or until set. Let them cool for 10 minutes and enjoy!
