Strawberry Crumble Bars

Strawberry Crumble Bars

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients:

2 1/3 cups all-purpose flour

½ teaspoon salt

2 sticks unsalted butter, room temperature

¾ cup sugar

1 teaspoon pure vanilla extract

10 oz strawberry jam

2/3 cup quick-cooking oats

Directions:

Preheat the oven to 350 degrees.

Sift together the flour and the salt in a separate bowl, put aside.

In an electric mixer with the paddle attachment add the butter and sugar. Mix on medium speed to cream the mixture and then add in the vanilla.

Turn the mixer on low and gradually add the dry mixture to the butter mixture until it is combined together into a ball.

Divide up the dough and gently line 2/3 into a 9-inch square baking pan. You want a small amount to reach around the sides of the pan to create edges. Coat the dough with strawberry jam but leave a small border around the edges.

Mix the rolled oats with the remaining dough and break off small pieces to sprinkle on top of the jam to form a crumble topping.

Bake the bars for 45 minutes until lightly browned. Allow the bars to cool completely before cutting.
